If you're tired of the same old pizza, try this!

Pizza is a staple in my house.  I usually make at least 1-3 pizzas per week. Usually as a side or a snack.

If you can get your hands on an old pizza pan (I have a couple of my grandmother's, which I believe may have been her mother's) they make the best crispy crust.

This pizza is absolutely delicious!  The bitterness of the escarole and the sweetness of the raisins make for a perfect balance.  This pizza is also a great party pizza.  Just cut it into small bite-size pieces, and it's sure to be a hit.

This particular pizza doesn't have the pine nuts because I ran out.  However, I do like it better with the pine nuts.

First I saute chopped garlic and chopped escarole in a pan with some extra virgin olive oil, until the escarole is wilted a bit.  Season with salt & pepper.  Then add some pine nuts and raisins to the pan, mix in and take off heat. Spread over your already rolled-out dough (already in pizza pan).  Then drizzle more EVOO over the entire pizza making sure you don't forget the crust.
Place into already heated 400degree oven for 20minutes (could be more, could be less, depending on your oven) or until nice and crispy.
Cool for a minute or so, then lastly drizzle pizza with a balsamic glaze.

Fried Dough aka Doughboys


Mid-day snack....
You can use any kind of sugar.  For me, I use Florida Crystals, but these are for the family and they like white sugar.
* Take your dough out a few hours before so it can rise and become nice and light & airy

Kalamata Olive Tapenade

This is a really easy recipe for a Quick & Very Delicious Olive Tapenade.

1 container of pitted Kalamata Olives finely chopped
2 cloves or 1 large clove of garlic finely chopped
approx. 3-4tbsp. of Extra Virgin Olive Oil 
A splash or two of Cognac
Mix all together and serve in a beautiful bowl surrounded with your favorite crackers

Enjoy!
*Be sure to cover & refrigerate any leftovers

Perfect Pound Cake

It's super moist and really easy to make.
I drizzled some melted (vegan) chocolate on top.  Enjoy it with your favorite cup of tea or coffee...very, very, yummy

Crispy Peanut Butter Treats


1c light corn syrup (Karo)
1c earth balance creamy peanut butter
1c sugar (florida crystals)
6c Kashi Heart to Heart cereal or 6c of your favorite crunchy vegan cereal

Pour cereal into a large bowl and set aside~

Mix corn syrup, sugar, and peanut butter in a saucepan.
Heat slowly until sugar dissolves, stirring constantly.
Remove from heat & pour sugar mixture over cereal & mix thoroughly
Spread into greased pan (I use a 9x12x2) and cool in a refrigerator until firm
Cut into squares
